Cornish Charcuterie Fennel Salami stick is made with whole fennel seeds for a mild aniseed flavour that works brilliantly with the pork.

Our salami is made to an Italian recipe. The meat is enhanced with carefully sourced fennel and spices before being gently smoked over beech chippings. The sausages are then left to mature for 10 days to 8 weeks, depending on size.

Vacuum packaged for freshness, these sticks make a perfect rustic edition to any picnic basket, hamper or charcuterie board. They also look fantastic hanging up in the kitchen.

Our salami sticks can be stored in a cool, dry place and have a shelf life of five weeks.

INGREDIENTS: Pork (147%), Curing Salt (Salt 99%, Preservative: E250), Dextrose, Fennel Seeds (0.71%), Starter Culture (Lactobacillus Sakei, Pediococcus Acidilactci, Staphylococcus Carnosus).

We craft, smoke and dry all our products by hand. All our ingredients are sourced locally where possible.
