Today is the day to celebrate one of the world's most historical and upcoming favourite tipples...rum! Rum was first distilled in the 17th Century from molasses which was a byproduct from the sugar cane industry. Today, the majority of the world's rum production is in the Caribbean and Latin America, and now Cornwall is on the list of rum producers!
Much of the rum produced in the UK is Caribbean rum, blended with spices to produce some very fine product! The Cornish Distilling Co. however, actually distils its own rum from scratch, making it one of the first distillers in the UK to do so.
The first rum creation from The Cornish Distilling Co.'s Head Distiller, Tom Read is Kalkar - an award-winning coffee spirit. Kalkar is made from Cornish distilled rum, blended with single origin coffee. Kalkar recently won the highly coveted three gold stars at the Great Taste Awards, with the judges commenting "a real grown up indulgence, step aside Espresso Martini."
Here are two of Tom's favourite rum cocktails, to be enjoyed with ice!
Tropic like it's hot
Ingredients:
- 50 ml white rum
- 20 ml Velvet Falernum (optional, but ideal for the depth of flavour. You can swap in for a splash of sugar syrup)
- 20 ml fresh lime juice
- 10 ml pineapple juice
- Mint and lime to garnish
Method:
As with most fruit juice based cocktails, the ingredients are best added to a cocktail mixer and shaken with ice. However you can put all of the ingredients together in a glass and mix.
Straight outta' coconuts
Ingredients:
- 50 ml coffee liqueur
- 100 ml good quality coconut water
Method:
As simple, as it sounds! Mix both ingredients over ice and enjoy. The better quality the coconut water, the better the end result!
