Cornish Charcuterie Fennel Salami stick is made with whole fennel seeds for a mild aniseed flavour that works brilliantly with the pork.
Packaged in brown paper, these sticks make a perfect rustic edition to any picnic basket, hamper or charcuterie board. The also look fantastic hanging up in the kitchen.
Our salami is made to an Italian recipe with home reared Cornish Lop pork and Ruby beef in traditional ratios of 80% pork to 20% beef. The meat is enhanced with carefully sourced fennel and spices before being gently smoked over beech chippings. The sausages are then left to mature for 10 days to 8 weeks, depending on size.
Our salami sticks can be stored in a cool, dry place and have a shelf life of 6 weeks.
